The archive at Historic Environment Scotland includes a wealth of material illustrating and recording Scotland’s food and drink heritage both past and present, and this gallery highlights images of distilleries and breweries, farming and fishing, factories, shops, cafes and restaurants, kitchens, bakeries and food markets from the whole of Scotland, many of them now lost. The collection includes historic photographs, architectural plans, engravings and sketches, modern survey photographs and drawings, as well as modern and historical aerial photographs.
This gallery has been created to coincide with the #ExploreYourArchives launch week 2017.
All the collections can be consulted in our Search Room and online resources. We also maintain an active digitisation programme, with new images being added to the Canmore database every day.

The original cupolas of the vaulted roof structure were removed in the 1960s when the Denaston Mill site was converted into a distillery.
