Cooled wort pumped from the paraflow heat exchangers would be pumped into each of these 28 stainless steel square fermentation vessels. Note the hangers coming from the ceiling. The stainless steel piping that carried the wort from the paraflow was suspended from these hangers, although it had been removed by the date of visit. Yeast from yeast production vessels nos. 4 and 5 (which are not visible in this view) is injected into to the fermentation vessels. Yeast uses soluble sugars in the wort to produce carbon dioxide and alcohol giving beer its 'fizz' and strength. Ales are fermented for 3-4 days and lagers for 5-7 days. The beer is then drawn off to be matured. Each vessel holds 120 barrels or half a brew

Mash tuns 1 and 2 are nearest the camera, the boiling copper (capacity of 220 barrels, which is a 'brew') and the lauter tun (19 feet 8 inches in diameter, 19 tons when empty, 45 tone when full) are visible. Hot liquor is run into mash tun no. 1 and some of this is pumped up into the copper tube carrying the malt mix from grist case no. 1. The liquor and partially mixed malt and liquor is mixed (with paddles) and heated to a pre-determined temperature for a pre-determined time before the resultant wort is pumped into the lauter tun and thence to the copper. Mash tun no. 2 (until 1980s a Decoction vessel or secondary mash vessel) was latterly used to heat liquor for the sparging process. The last mash took place on 19th/20th April 1999 but the brewhouse was re-commissioned for a mash which took place on 14th December 1999 when the Caledonian Brewery was damaged in a fire. The brewhouse coppers were installed in 1955 and were made by Christian Berner of Gothenburg, Sweden

Yeast from yeast production vessels nos. 4 and 5 (which are not visible in this view) is injected into to the fermentation vessels. Yeast uses soluble sugars in the wort to produce carbon dioxide and alcohol giving beer its 'fizz' and strength. Ales are fermented for 3-4 days and lagers for 5-7 days. Mash tuns 1 and 2 are nearest the camera, the boiling copper (capacity of 220 barrels, which is a 'brew') and the lauter tun (19 feet 8 inches in diameter, 19 tons when empty, 45 tone when full) are visible. Hot liquor is run into mash tun no. 1 and some of this is pumped up into the copper tube carrying the malt mix from grist case no. 1. The liquor and partially mixed malt and liquor is mixed (with paddles) and heated to a pre-determined temperature for a pre-determined time before the resultant wort is pumped into the lauter tun and thence to the copper. Mash tun no. 2 (until 1980s a Decoction vessel or secondary mash vessel) was latterly used to heat liquor for the sparging process. The last mash took place on 19th/20th April 1999 but the brewhouse was re-commissioned for a mash which took place on 14th December 1999 when the Caledonian Brewery was damaged in a fire. The brewhouse coppers were installed in 1955 and were made by Christian Berner of Gothenburg, Sweden
