Malt, the product of the malting process where the sugar content of grain is maintained by soaking the grain, causing germination (converting strarch to sugar) and then heating the grain to stop the process, is mostly used in distilling and brewing. Floor, Saladin box and drum maltings are methods whereby malting is carried out. Drum maltings, the most reently devloped of the methods, involves turning the germinating grain in air-conditioned drums.
