Scope and Content Malt kilns from south, Glengarioch Distillery, Distillery Road, Old Meldrum, Aberdeenshire Glengarioch Distillery was established in 1797 by Ingram, Lamb & Co. It changed hands several times before closing in 1968. It re-opened in 1970 after being purchased by Stanley P Morrison, and the number of stills was increased from two to three in 1973. After being mothballed in 1995 it re-opened in 1997. This shows the malt kilns with their wooden pagoda vents topped by iron wind vanes. These originally ventilated malted barley drying above peat fires. They are linked to the west end of the maltings (where barley was soaked and germinated) by an overhead walkway (right). The maltings supplied half the malt used by the distillery, with the rest being bought in from commercial maltsters. Malted barley is ground and combined with warm water to begin the fermentation process. The malt is drawn out of the worts (malt sugars), which are then cooled and yeast added to ferment the mixture further. This liquid, called wash, is then distilled from 'low wines' (once-distilled spirit) to unmatured whisky in pear-shaped copper vessels before maturation in wooden casks.
