Scope and Content A selection of highly glazed tajines can be seen at this market stall in a Souk at Marrakech in Morocco. The traditional tajine cooking pot consists of two parts - a flat base and a cone-shaped cover, which helps create condensation during the cooking process. Tajine (or tagine) now also refers to the stew which is cooked in the pots.
