Kinnaird Head Preserving Works in Bath Street, founded in 1883 by the Maconochie Brothers. Initially it canned herring during the season, mainly for export, but from the end of the nineteenth century it produced army rations, establishing its reputation during the Boer War and providing the famous ‘Maconochie rations’ to the British armed services in two World Wars.397 The presence of this factory was to provide a substantial prop to the remaining locally based fishing industry after the collapse of the herring trade.
