Scope and Content Cooling dishes, Dairy, Guisachan, Highland Dating from 1860, this huge courtyard steading was designed by A & W Reid & Mackenzie for Lord Tweedmouth who bought Guisachan estate from William Fraser of Culbokie in 1854. Guisachan House is now a ruin, but the farm, which includes a picturesque dairy, and the model village of Tomich, are still standing. This is a view of a selection of cooling dishes in the dairy, showing the trademarks on their bases. The two plates to the left read 'Vernon Patent Noiseless Ware', then the next one 'Vernon's patent; Proprietor of Patent Rights; Zuccan London', and on the right dish 'Dairy Supply Co Limited, Museum St, London'. During the 18th century, dairies were the most elaborate and highly ornamented buildings on a farm and although this one was built in 1876, the reasons behind its lavishness are the same. Supervising the making of butter and cheese, the preparation of milk and cream, rennet and whey for the owner's table was a recognised occupation for the lady of the house. The dairy was not therefore a utilitarian place for servants and labourers. Source: RCAHMS contribution to SCRAN.
