Scope and Content Mash house model, Glenkinchie Distillery, Pencaitland, East Lothian Glenkinchie Distillery was established in 1837 by brothers John and George Rate, who went bankrupt in 1853 leading to the closure of the site and its reuse as a cowshed. In 1880 the Glen Kinchie Distillery Company rebuilt the premises, and production began once more. The floor maltings were last used in 1968, and now house a museum of malting. The distillery continues to produce whisky for Haig's blends. This shows a 1:6 scale model of a mash house, part of a model distillery which was exhibited in the 'Palace of Industry' at the Empire Exhibition of 1924-5 in London. It shows the water heaters (left), and the grist hopper, mash tun and underback (right). Ground, malted barley (grist) is mixed with hot water in the mash tun to produce a fermentable solution of malt sugars called 'wort'. These are held in the underback tank before being cooled and fermented with yeast in the washbacks. The resulting 'wash' is distilled in copper pot stills to create unmatured whisky ready for maturation in oak casks. Source: RCAHMS contribution to SCRAN.
