Scope and Content Model steeps and maltings, Glenkinchie Distillery, Pencaitland, East Lothian Glenkinchie Distillery was established in 1837 by brothers John and George Rate, who went bankrupt in 1853 leading to the closure of the site and its reuse as a cowshed. In 1880 the Glen Kinchie Distillery Company rebuilt the premises, and production began once more. The floor maltings were last used in 1968, and now house a museum of malting. The distillery continues to produce whisky for Haig's blends. This shows a 1:6 scale model of the maltings building in a distillery. The cut-away wall reveals the steeping tanks where barley is soaked before being spread out on the malt floor to germinate. This model was exhibited at the 1924-5 Empire Exhibition in London, as part of the 'Palace of Industry'. Once the barley has germinated it is dried over a peated fire, ground into 'grist' in the malt mill, mixed with water, fermented, washed and the resulting liquid 'wash', distilled in copper pot stills. This is then left to mature in oak barrels for at least three years whilst it takes on its rich golden colour and complex flavour. Source: RCAHMS contribution to SCRAN.
