Scope and Content Model of tun room, Glenkinchie Distillery, Pencaitland, East Lothian Glenkinchie Distillery was established in 1837 by brothers John and George Rate, who went bankrupt in 1853 leading to the closure of the site and its reuse as a cowshed. In 1880 the Glen Kinchie Distillery Company rebuilt the premises, and production began once more. The floor maltings were last used in 1968, and now house a museum of malting. The distillery continues to produce whisky for Haig's blends. This shows a highly detailed 1:6 scale model of a tun room. It is part of a model distillery exhibited at the Empire Exhibition of 1924-5 in London. The cut-away wall shows four vessels called washbacks in which 'wort' (fermentable solution of malt sugars) is mixed with yeast and fermented. The froth produced is contained below wooden lids on each washback. Glenkinchie lies in the Lowlands of Scotland, surrounded by farm land. Most early distilleries (many of them illicit), started on farms as a way to use up large amounts of barley to produce a profitable supply of whisky. Production generated waste barley 'draff', which could be fed to cattle and pigs. Source: RCAHMS contribution to SCRAN.
