Scope and Content Malt dressing machine in mill room from south, Dalwhinnie Distillery, Highland Dalwhinnie Distillery (originally known as Strathspey Distillery) was founded c.1898 by James Buchanan. Ownership passed to various private individuals before the site was taken over by the Distillers' Company Ltd in 1926, and the Scottish Malt Distillers in 1930. It closed after a severe fire in 1934, and re-opened in 1939. This shows the malt dressing machine in the mill room. This large machine is cased in wood and is used to 'dress' the grains of germinated and kiln-dried malted barley, removing the 'combings' or rootlets and other impurities. Once cleaned, the malt is ground in a mill before being mixed with water to start the fermentation process. Dalwhinnie means 'meeting place' a name which refers to the crossing point between two roads where smugglers and cattle drovers would meet. The distillery uses water from the nearby Allt an t'Sluic burn, and before the days of large commercial maltings, processed its own malt drying it over peat dug from the surrounding deposits.
