Scope and Content Condensers from north-east, Dalwhinnie Distillery, Highland Dalwhinnie Distillery (originally known as Strathspey Distillery) was founded c.1898 by James Buchanan. Ownership passed to various private individuals before the site was taken over by the Distillers' Company Ltd in 1926, and the Scottish Malt Distillers in 1930. It closed after a severe fire in 1934, and re-opened in 1939. This shows the condensers on the exterior wall of the still house. These condense the alcohol which rises as vapour from the stills inside. These are the modern version of the more traditional 'worm-tubs', coiled copper tubes in tanks of cold water which produce the same result. After passing through the condenser, the 'heart' of the clear spirit run is put into oak casks. Maturation for three years or more in bonded (locked) warehouses gives the whisky its golden colour and distinctive taste, and it can be officially bottled and labelled as Scotch whisky.
