Scope and Content Inverted flue in south-east kiln, Dalwhinnie Distillery, Highland Dalwhinnie Distillery (originally known as Strathspey Distillery) was founded in c.1898 by James Buchanan. Ownership passed to private individuals before the site was taken over by the Distillers' Company Ltd in 1926, and the Scottish Malt Distillers in 1930. It closed after a severe fire in 1934, and re-opened in 1939. This shows the base of the malt kiln where the fire would be lit, producing heat to dry malt spread out on the perforated floor above. The iron doors and vents allow more fuel to be fed into the kiln, and its supply of air moderated. The spreading form of the metal inverted flue above allows the heat to reach all areas of the drying floor. Most distilleries used peat as a fuel for their kilns, as it was often easily gathered from natural deposits close to the site. This creates smoke with a distinctive scent known as 'peat reek', giving the barley, and in turn the finished whisky, a distinctive taste and 'nose'. Source: RCAHMS contribution to SCRAN.
