Scope and Content Duty free warehouse, former maltings and kiln, and distillery locomotive, Aberfeldy Distillery, Aberfeldy, Perth & Kinross Aberfeldy Distillery was founded in 1896 by the brothers John and Thomas Dewar to produce whisky suitable for blending. It was owned by the Distillers Company Ltd from 1925 and Scottish Malt Distillers Ltd from 1930 before being substantially modernised 1972-3 for John Dewar & Sons Ltd. The site boasted a direct rail link to Dewar's warehouses in Perth until the 1960s. This shows, from left to right, the duty free warehouse where barrels of whisky are stored, the two bays of the former maltings where barley is soaked and allowed to germinate, and the pagoda roofed kiln where this malted barley is dried over a peat fire. The small tank engine was built c.1920 and would have been used to shunt wagons around the site before they were assembled as trains for the main line. Malted barley is ground and combined with warm water to begin the fermentation process. The malt is drawn out of the worts (malt sugars), which are then cooled and yeast added to ferment the mixture further. This liquid, called wash, is then distilled from 'low wines' (once-distilled spirit) to unmatured whisky in pear-shaped copper vessels before maturation in wooden casks.
