Scope and Content Spirit safe in still house, Aberfeldy Distillery, Aberfeldy, Perth & Kinross Aberfeldy Distillery was founded in 1896 by the brothers John and Thomas Dewar to produce whisky suitable for blending. It was owned by the Distillers Company Ltd from 1925 and Scottish Malt Distillers Ltd from 1930 before being substantially modernised 1972-3 for John Dewar & Sons Ltd. The site boasted a direct rail link to Dewar's warehouses in Perth until the 1960s. This shows the spirit safe, a brass and glass box into which flows the distilled spirit from the stills. The alcohol content is measured using floating devices called hydrometers, which measure the specific gravity (or strength) of the spirit. Only the middle cut, or 'heart' of the liquid running into the spirit safe is suitable for maturation into whisky. The first and last parts of the run, called foreshots and feints, are returned to the still for distillation once more. The safe is kept locked by large Customs and Excise Crown padlocks, because as soon as the spirit enters the safe it is dutiable (subject to tax) and must be measured and monitored in case of theft.
