Scope and Content Mill room from south-south-east, Aberfeldy Distillery, Aberfeldy, Perth & Kinross Aberfeldy Distillery was founded in 1896 by the brothers John and Thomas Dewar to produce whisky suitable for blending. It was owned by the Distillers Company Ltd from 1925 and Scottish Malt Distillers Ltd from 1930 before being substantially modernised 1972-3 for John Dewar & Sons Ltd. The site boasted a direct rail link to Dewar's warehouses in Perth until the 1960s. This shows the mill room where malt is ground in the malt mill (centre) after germination in the maltings and drying in the peat-fired kiln. The wooden elevator (left) and the red chute (top) help move the malt on to the next stage in the whisky-making process, the mash tuns, where water is added and washed through the mixture before fermentation in the washbacks. The wash is then distilled by heating it in large copper stills until the alcohol vaporizes. After passing through a condenser, the 'heart' of the clear spirit run is put into oak casks. Maturation for three years or more in bonded (locked) warehouses gives the whisky its golden colour and distinctive taste. Source: RCAHMS contribution to SCRAN.
