Scope and Content Filling store from north-west, Aberfeldy Distillery, Aberfeldy, Perth & Kinross Aberfeldy Distillery was founded in 1896 by the brothers John and Thomas Dewar to produce whisky suitable for blending. It was owned by the Distillers Company Ltd from 1925 and Scottish Malt Distillers Ltd from 1930 before being substantially modernised 1972-3 for John Dewar & Sons Ltd. The site boasted a direct rail link to Dewar's warehouses in Perth until the 1960s. This shows the filling store with its huge spirit receiver. This holds unmatured whisky from the still room, and dispenses it into casks using the hoses suspended from the ceiling. The barrels on the floor have all been used previously for holding Oloroso sherry or American Bourbon, and it is maturation for over three years in these barrels which gives whisky its famous golden colour. Whisky is stored in bonded (locked) warehouses until it has matured. This must be for at least three years, but many casks are left for up to 20 years. During this time, about 2% of the alcohol in a barrel is lost through evaporation each year, a loss which is known as 'the angel's share'. Source: RCAHMS contribution to SCRAN.
