Scope and Content Control panel and mash tun in mash house, Ardmore Distillery, Kennethmont, Aberdeenshire Ardmore Distillery was founded in 1898 by William Teacher's son, Adam, to produce whisky for blending. The whisky produced here continues to be used in Teacher's Highland Cream, and is also released in some single malt bottlings. The distillery was modernised in the 1950s and 1970s, but still retains its traditional coal-fired stills. This shows the copper-domed mash tun, measuring 7.62m in diameter with its control panel in front. The mash tun mixes together, or 'mashes' 12 tonnes of ground malted barley and hot water at one time. This produces a fermentable solution of malt sugars called wort. This mixture is washed through before yeast is added and fermentation begins in the washbacks. The wash is then distilled by heating it in large copper stills until the alcohol vaporizes. After passing through a condenser, the 'heart' of the clear spirit run is put into oak casks. Maturation for three years or more in bonded (locked) warehouses gives the whisky its golden colour and distinctive taste. Source: RCAHMS contribution to SCRAN.
