Scope and Content Gray, Dunn & Co, Stanley Street, Glasgow This factory was established in 1861 by Gray, Dunn & Co. The premises were initially small, but were developed over a long period to cover a large area, with additions of all dates from the 1870s to the 1950s. The firm's most famous product was the 'Blue Riband' milk-chocolate-covered wafer biscuit. This shows the southern part of the factory from the north-west, with two 19th-century buildings sandwiched between 20th-century ones. The 19th-century blocks were designed by Stark & Rowntree, architects, and built in 1893 and 1897, of dark red brick with white glazed brick details. Biscuit baking was a notable industry in both Edinburgh and Glasgow. The industry formerly employed large numbers of women in packing the product, but mechanisation has substantially reduced the numbers needed. The Gray, Dunn works now operates at a relatively low level. Source: RCAHMS contribution to SCRAN.
