Scope and Content Dining Room, Peebles Hotel Hydropathic, Innerleithen Road, Peebles Peebles Hotel Hydropathic, a hotel offering scientific cures and water therapy, opened in 1881 on the slopes of Venlaw overlooking the town of Peebles. The interior of the hotel was photographed in 1894 by the photographer, Harry Bedford Lemere. The dining room, at the east end of the hotel, had magnificent views overlooking the valley of the River Tweed. The long tables, with their crisp white tablecloths and interesting arrangement of table napkins, could cater for up to 200 guests. The hotel employed a German chef who had worked for 'a mighty royal German duke', and a staff of four assistants. Dishes might consist of duck and green peas or partridge and cabbage with 'their attendant array of fat little square discs of bacon'. Source: RCAHMS contribution to SCRAN.
