Scope and Content Dumbarton and Inverleven distilleries, Dumbarton (West Dunbartonshire council area) These distilleries were founded in 1938 by Hiram Walker and Sons (Scotland) Ltd, the Scottish subsidiary of Hiram Walker-Gooderham and Worts, of Canada. Dumbarton is a grain whisky, and Inverleven (with Lomond) was a lowland malt whisky distillery. This view shows the yeast plant in Dumbarton Distillery. The bub tank in the foreground was used to prepare a yeast culture for adding to a fermenting vessel by growing it in a small quantity of wort. A large grain whisky distillery like Dumbarton used very large quantities of yeast, so that it was worthwhile to have a specific yeast plant. Even the largest malt whisky distilleries found it cheaper to buy in yeast. Source: RCAHMS contribution to SCRAN.
