Scope and Content Glenfarclas Distillery, Ballindalloch, Banffshire This distillery was founded in 1836 by a farmer, Robert Hay. It was eventually acquired by the Grant family, who formed a limited company with Pattison Elder and Co in 1895, which rebuilt it. Pattisons collapsed in 1898, and the Grants again took over. This view shows the interior of the Lauter mash tun recently installed in 1980, one of the first in the Scotch whisky industry. Note the rakes on the crossbar, which are turned during mashing, and can be used to clear the 'draff' at the end of the mash. In the traditional mash tun the rakes revolve round horizontal shafts, and there are 'ploughs' to clear the draff. Mashing is the extraction of sugars from crushed malt. Draff consists of the husks of the malt left after extraction of the sugars. Source: RCAHMS contribution to SCRAN.
