Scope and Content Highland Park Distillery, Holm Road, Kirkwall, Orkney This distillery is said to have been founded in 1795, but the earliest clear reference to it is in 1825, when it was operated by Richard McKay. After passing through various hands it was sold in 1895 to James Grant, who enlarged it from two to four stills This view shows the stillhouse, with three of the four steam-heated stills. The objects projecting from the still necks are vacuum relief valves, to prevent the stills from collapsing should the pressure inside fall below that outside. The distillery is unusual in its continuing use of floor malting to provide peated malt. The peat used is cut locally, and is associated with the heather which grows on its surface, giving a distinctive flavour to the malt. Source: RCAHMS contribution to SCRAN.
