Scope and Content Corstorphine Dovecot, Dovecot Road, Corstorphine, Edinburgh, from the west Corstorphine Dovecot, a 16th-century structure, stands near to the site of Corstorphine Castle, the 14th-century former stronghold of the Forrester family. Although the dovecot is not as old as the castle, it was undoubtedly associated with it. The dovecot, a flat-topped thick-walled beehive, is divided horizontally by three string-courses. It has six entrance holes for the birds in the south wall, and a low door, embellished by ornamental ironwork, on the north side. The interior has 28 tiers of stone boxes, providing 1,060 sites for nesting pigeons, who provided an all-year-round supply of meat (the dish of the day being pigeon-pie!) and eggs, and a large quantity of droppings as manure for the vegetable garden.
