Scope and Content Joppa Pans, Joppa, Edinburgh The sea-salt industry of Scotland seems to have been the largest of its kind. Its centre was the Forth Estuary, where seawater, undiluted with fresh water, lapped shores where coal was available nearby. Joppa was the site of a set of salt-boiling pans. This two-storey building seems to have been the front range of a salt-boiling works on the shore to the rear. It probably housed a warehouse and office, and possibly a supervisor's house. The salt-boiling industry enjoyed preferential duties under the Salt Acts of the United Kingdom Parliament, to take account of the greater costs in preparing salt from sea-water than from brine.
