Scope and Content Cheese press, Corrachree Home Farm, Tarland, Aberdeenshire This is a good example of a cheese press, used to expel the whey from a newly-made cheese, or cheeses. They survived in upland areas, as here, until communications improved after World War II. This view shows the massive construction of this press, with granite slabs forming the frame of the device. The weight suspended between the sides could be raised and lowered by a screw at the top. The cheeses were placed below the weight. The use of granite for cheese press construction, as seen here, was an Aberdeenshire speciality. Elsewhere it was more usual to have the sides and top of the frame made of malleable iron.
