Scope and Content Alcove in dining room at No 1, north side of Charlotte Square, Edinburgh No 1 Charlotte Square was built by Alexander Stevens to Robert Adam's 1791 design. Stevens designed Nos 1 and 2 as two ingeniously interlocked houses, and not the one very large house originally proposed for the east pavilion of the north terrace. The ground-floor dining room of the house had a recessed alcove, normally in the wall facing the two front windows, that would have contained a serving table or a sideboard. This was an essential element in any dining room with pretensions to grandeur. In the late 18th century, the serving of meals by courses called 'removes' was a new habit adopted from France. A single remove would include both savoury and sweet dishes laid out together, and guests were encouraged to 'try a bit of everything'. Source: RCAHMS contribution to SCRAN.
