Scope and Content Steading with cheese press, Reay, Caithness This apparently unremarkable range of single-storey buildings has the unique feature of a cheese press built into the front wall, towards the west end of the building. There is a joiner's workshop at the east end of the range. This view shows the complex from the north west. The cheese press is between the two doors at the far end of the building. A cheese press generally had a heavy stone weight in an iron or stone frame, with a screw for raising or lowering the weight. Newly-made cheeses in their moulds were squeezed in the press to remove whey. It was usually free standing. Source: RCAHMS contribution to SCRAN.
