Scope and Content Steading with cheese press, Reay, Caithness This apparently unremarkable range of single-storey buildings has the unique feature of a cheese press built into the front wall, towards the west end of the building. There is a joiner's workshop at the east end of the range. This view shows the cheese press set into the wall, with its unusually massive weight. A cheese press generally had a heavy stone weight in an iron or stone frame, with a screw for raising or lowering the weight. Newly-made cheeses in their moulds were squeezed in the press to remove whey. It was usually free standing. Source: RCAHMS contribution to SCRAN.
