Scope and Content Separator box, Bunnahabhainn Distillery, Islay, Argyll Bunnahabhainn was built in 1881 and is a fine example of a purpose-built distillery, designed for maximum efficiency. This traditional separator box is still used to check the consistency of the milled malt. Malt is placed in the top tray which catches the biggest grains;the smaller grains are caught by the middle tray, while the finest collect in the bottom tray. To make whisky, barley is allowed to germinate into malt. This is dried, milled and mixed with hot water to make wort which is fermented with yeast. The resulting wash is distilled to produce whisky which must then be matured in casks. Source: RCAHMS contribution to SCRAN.
