Scope and Content Spirit-safe, still-house, Bunnahabhainn Distillery, Islay, Argyll Bunnahabhainn was built in 1881 and is a fine example of a purpose-built distillery, designed for maximum efficiency. The glass-fronted spirit-safe, made in 1961, allows the condensed product of the stills to be tested for alcohol content, but prevents anybody from helping themselves. To make whisky, barley is allowed to germinate into malt. This is dried, milled and mixed with hot water to make wort which is fermented with yeast. The resulting wash is distilled to produce whisky which must then be matured in casks. Source: RCAHMS contribution to SCRAN.
