Scope and Content Pagoda roof vent, kiln roof, Ardbeg Distillery, Islay, Argyll Ardbeg Distillery was founded in the late 18th century by Alexander Stewart, but is first recorded in operation in 1817-18. The pagoda-like structure is the roof vent of the kiln where wet 'green' malt is dried prior to milling. To make whisky, barley is allowed to germinate into malt. This is dried, milled and mixed with hot water to make wort which is fermented with yeast. The resulting wash is distilled to produce whisky which must then be matured in casks.
