Scope and Content Window, Old Malt Barn, Lagavulin Distillery, Islay, Argyll Lagavulin is an example of the type of distillery that gradually developed after early 19th-century changes in the law made commercial distilling easier. The Old Malt Barn, now disused, dates from the second half of the 19th century. The windows are half-shuttered. To make whisky, barley is allowed to germinate into malt. This is dried, milled and mixed with hot water to make wort which is fermented with yeast. The resulting wash is distilled to produce whisky which must then be matured in casks.
