Scope and Content Diagram of interior of malt barn and kiln of Edradour Distillery, Pitlochry, Perthshire Edradour Distillery was founded in 1837 and was the last of the small farm distilleries. It was still operating on a small scale in the late 19th century, and employed all the traditional methods and equipment until the 1960s. The malt barn has: a loft for storing barley (1); tanks or 'steeps' for soaking the barley to promote germination (2); a malting floor for spreading the barley on while it turns into malt; and a kiln with a furnace (4), drying floor (5) and roof vent. To make whisky, barley is allowed to germinate into green malt. This is dried, milled, and mixed with hot water to make wort which is extracted and fermented with yeast. The results are distilled to produce raw whisky which is then matured in casks. Source: RCAHMS contribution to SCRAN.
