Scope and Content Rack-frames inside kippering-house on Shore Street, Thurso, Caithness The kippering-house on Shore Street in Thurso is a well preserved traditional example of its kind. This rack-frame was used for holding tenter-sticks loaded with herrings both before and after they had been smoked. It is one of several examples of original fittings surviving in the plant. The smoking process took six to twelve hours. Source: RCAHMS contribution to SCRAN.
