Scope and Content Spirit safe from Port Ellen Distillery, Islay This is probably the earliest spirit safe in existence. It used to belong to the Port Ellen Distillery but is now in the Museum of HM Customs and Excise in London. The spirit safe is a locked brass box with glass sides which contains three hydrometers. It was used to take samples from the stills without the still-man coming into physical contact with the distillate. The spirit safe was a device introduced by the Customs and Excise in 1823. The Excise Act of 1823 gave the Excise-men extended powers. They were permitted to destroy illicit stills and spirit, and confiscate equipment. Source: RCAHMS contribution to SCRAN.
