Scope and Content Still at Edradour Distillery, Perthshire Edradour Distillery was founded in 1837 and was the last of the small farm distilleries. It was still operating on a small scale in the late 19th century, and employed all the traditional methods and equipment until the 1960s. In general, traditional stills are very similar to each other. However, the bent pipe or 'lyne arm' at the top of the neck of the still varies from place to place. The angle of the 'lyne arm' is thought to greatly affect the flavour of the whisky. To make whisky, barley is allowed to germinate into green malt. This is dried, milled and mixed with hot water to make wort which is extracted and fermented with yeast. The results are distilled to produce raw whisky which is then matured in casks.
