Scope and Content Detail of tentering trough inside kippering-house on the Steps, Wick The kippering-house on Shore Street in Thurso is a well preserved traditional example of its kind. This tentering trough was used to hold the tenter-sticks while the fish were being hooked onto them. The trough caught the drops of vinegar left over from the pickling process. The smoking process took six to twelve hours. Source: RCAHMS contribution to SCRAN.
