Scope and Content Mash tun in mash house, Pittyvaich Distillery, Dufftown, Moray Pittyvaich Distillery was built in 1975 by Arthur Bell & Sons Ltd next to its sister distillery, Dufftown. The malt whisky produced here was first released onto the market in 1991, and also used in Bell's blends. After being mothballed in 1993, a trial run of gin production was attempted in 1994. The site is now used for testing new barleys. This shows the interior of a mash tun, which is used to mix hot water and malt together to extract the sugars for fermentation. It is fitted with a revolving stirring arm with rake-like attachments. The base plates have been lifted for cleaning and are stacked around the outside. Malt whisky is made by mixing ground, malted barley with warm water to begin the fermentation process. The malt is drawn out of the worts (malt sugars), which are then cooled and yeast added to ferment the mixture further. This liquid, called wash, is then distilled from 'low wines' (once-distilled spirit) to unmatured whisky in pear-shaped copper stills before maturation in wooden casks.
