Scope and Content This central block or room was the mill room where the malted grain (grain greminated and then heated in a kiln to stop germination) was milled or crushed between mill stones to form 'grist' a coarse meal which was mixed with warm water in the mash tun to extract the sugars. The mill stones were powered by a steam engine. A distillery is where whisky is made. Ground, malted grain (barley) and water is put through processes including distillation to produce an alcoholic, premium beverage. Whisky or whiskey is produced in other countries. Only whisky distilled in Scotland following strict rules can be marketed as 'Scotch Whisky'.
