Description Interior. Cask Rejuvination Process. Charring Area. The gas jet burners. The cask shells to be rejuvinated were placed on movable plates with a circular flange to hold the shell steady. This was slid into place by compressed air and the jet gas burners set alight and the interior of the cask was burnt for about two and a half minutes. Charring carmelises the sugars in the wood and allows the cask to impart colour and flavour into the spirit as it undergoes maturation in the cask..
