Scope and Content Oyster Bar at the Café Royal, West Register Street, Edinburgh The Café Royal in West Register Street, a narrow zigzag street between Princes Street and St Andrew Square, was designed in 1861 by Robert Paterson as a showroom for gas and sanitary fittings, but opened instead in 1863 as the Café Royal Hotel. The opulent Oyster Bar, divided by an elaborate walnut screen from the Circle Bar, has a marble-topped counter. Behind it are eight stained-glass windows of British sportsmen by Ballantine and Gardiner. On the wall are two Doulton murals of ships. From September to April oyster vendors came to the New Town, where the best oyster cellars, described by Captain Edward Topham in 1775 as 'high life below stairs', were to be found. For much of the 18th century, oyster parties were very popular. Source: RCAHMS contribution to SCRAN.
