Scope and Content Detail of kitchen range, Arniston House, Midlothian This shows a 'close' range (without an open grate) within an arched recess. The range was heated by a coal fire behind the small door on the left, which warmed the large 'hotplate' surface above, as well as two ovens below. A flue would have led from the firebox to the chimney, and the heat of the fire would be controlled by a damper in the chimney and a ventilator in the grate. Above the range is a warming shelf and drying rail. The kitchens at Arniston contain another large close range with bigger ovens, a separate bread oven, a curved recess with shelves (which once contained a much older bread oven), and a warming oven (later converted into a store cupboard). The family would need to use all these pieces of equipment to feed their large household, guests and servants. Arniston House, the seat of the Dundas family, was built in the Palladian style from 1726 onwards by architect William Adam (1689-1748) on the site of a c.1600 U-plan tower-house. His son John (1721-92) added the west wing and orangery in 1753. The house was further altered during the 19th century, and comprises a central three-storeyed block with flanking two-storeyed service pavilions joined to the main building by two-storeyed links.
