Scope and Content Detail of maker's plate on kitchen range, Arniston House, Midlothian This shows a cast-iron maker's plate on the 'close' range (which has a firebox rather than an open fire). The makers were James Gray & Sons of 89 George Street, Edinburgh, and the firm is still in business at this address. Above the plate is the coat of arms of a female member of the Royal family, suggesting Royal patronage of the firm. The kitchens as Arniston contain another large close range with bigger ovens, a separate bread oven, a curved recess with shelves (which once contained a much older bread oven), and a warming oven (later converted into a store cupboard). The family would need to use all these pieces of equipment to feed their large household, guests and servants. Arniston House, the seat of the Dundas family, was built in the Palladian style from 1726 onwards by architect William Adam (1689-1748) on the site of a c.1600 U-plan tower-house. His son John (1721-92) added the west wing and orangery in 1753. The house was further altered during the 19th century, and comprises a central three-storeyed block with flanking two-storeyed service pavilions joined to the main building by two-storeyed links.
