Scope and Content Detail of kitchen range, Arniston House, Midlothian This shows an iron 'close' range (with a closed firebox rather than an open grate) in the kitchens made by James Gray & Sons of 89 George Street, Edinburgh. The firebox is in the centre of the base, with large ovens on each side. The hotplate above would be used for heating pans and boiling water. Further warming ovens are built into the top of the range. The kitchens as Arniston contain another large close range with smaller ovens. In large households, two ovens were kept at different temperatures to allow for different sorts of cooking and baking to take place simultaneously. Arniston House, the seat of the Dundas family, was built in the Palladian style from 1726 onwards by architect William Adam (1689-1748) on the site of a c.1600 U-plan tower-house. His son John (1721-92) added the west wing and orangery in 1753. The house was further altered during the 19th century, and comprises a central three-storeyed block with flanking two-storeyed service pavilions joined to the main building by two-storeyed links.
