Scope and Content Part of original kitchen, Drumlanrig Castle, Dumfries & Galloway This section of stone-vaulted ceiling, which may date from the earlier mid-16th-century house, was part of the original kitchen in the basement of the castle. The kitchen is likely to have been staffed by a cook, several kitchenmaids and a few scullery maids in an atmosphere of 'workmanlike clutter'. It would have had a floor of stone flags, whitewashed walls and probably two open fireplaces, one at each end of the room. The fireplace would have contained a spit for roasting, and perhaps even a 'rotator', gearing for the spit which was moved by a fan in the chimney flue. (In 1760 the rotator was the very latest thing.) The kitchen would have been dominated by a huge scrubbed wooden table, constructed in the room, and would have contained a bread oven, a range of heavy utensils, pewter (or copper) pots and pans, earthenware jars, mortar and pestles, as well as a great array of plates and huge dishes for serving and carrying food to the table. Drumlanrig Castle, one of the great Renaissance courtyard houses of Scottish domestic architecture, was built between 1679 and 1690 for William Douglas, 1st Duke of Queensberry, incorporating part of a mid-16th-century house and the remains of a late 14th-century Douglas stronghold which originally stood on the site. The architect was almost certainly James Smith who had worked on the construction of Holyrood Palace, Edinburgh, and the Master of Works (builder) was William Lukup.
