Scope and Content Golspie Mill, Golspie, Highland from south-east Golspie Mill was built c.1810, and is one of two mills on the site which belonged to the Duke of Sutherland in the 1870s. Golspie Mill is a large, three-storeyed, five-bayed building constructed from dressed sandstone. Three pairs of millstones within the mill are still in use, and are powered by an overshot waterwheel (water is channelled to hit the top of the wheel). This shows the mill with its tall stone walls, crowstepped gables, and external waterwheel (centre right). Water hits the top of the wheel from the lade, turns the wheel, and is diverted back to the burn in an underground tail race. The drying kiln is identifiable by its rooftop ventilator (right). Hens, often kept for eggs and meat at rural mills, roam the grounds. Golspie Mill's water wheel measures 3.86m in diameter and 1.72m wide. It powers three millstones which produce: beremeal (an ancient variety of barley which has been grown in Scotland since Neolithic times, peasemeal (dried yellow peas ground into flour), wholemeal organic wheat flour, organic rye flour, and maize meal (known as 'Indian Meal' in the Western Isles).
