Scope and Content View of malt mill in mill room, Tormore Distillery, Highland Tormore was the first new distillery to be built in Scotland in the 20th century. It was designed by architect Sir Albert Richardson, a past president of the Royal Academy and completed in 1960. In 1972 the number of stills was increased from four to eight, and it continues to produce spirit for the Long John blends. This shows a malt mill made by Porteus of Leeds, a company who provide malt mills for most distilleries. Above the mill is a weighing chamber for measuring amounts of malted barley. Once ground, this 'grist' is mixed with hot water in the mash tun. This releases the sugars creating a fermentable solution called 'wort'. The wort is fermented with yeast in the washbacks, and the resulting 'wash' is distilled in copper pot stills, condensed, and matured in oak casks. Tormore uses water from the Achvochkie burn to produce its Speyside malt whisky. Source: RCAHMS contribution to SCRAN.
