Scope and Content Malt house from north-east, Ben Nevis Distillery, Fort William, Highland Ben Nevis Distillery was founded in 1825 by 'Long John' MacDonald, and first produced a whisky known as 'Dew of Ben Nevis'. The site was bought by Joseph Hobbs in 1955, who installed a Coffey still to produce grain spirit. In 1989, Ben Nevis Distillery was bought by the Japanese company Nikka who revived the production of malt whisky. This shows the malt store, which holds up to 200 tonnes of malted barley which lies ready for use in the distillery at any one time. The two-storeyed building has partially whitewashed rubble walls and a corrugated metal roof with vents. A large sign on the front of the building is painted above a small lean-to store. Malt whisky is made by soaking barley and allowing it to germinate before drying over peat fires in a kiln (this stage often takes place in commercial maltings). The malted barley is then ground and mixed with water before fermentation and distillation into whisky. This is left to mature for at least three years in oak casks where the flavour develops further and it takes on its famous golden colour. Source: RCAHMS contribution to SCRAN.
