Scope and Content Tun room from east, Dalwhinnie Distillery, Highland Dalwhinnie Distillery (originally known as Strathspey Distillery) was founded c.1898 by James Buchanan. Ownership passed to various private individuals before the site was taken over by the Distillers' Company Ltd in 1926, and the Scottish Malt Distillers in 1930. It closed after a severe fire in 1934, and re-opened in 1939. This shows the upper level of the washbacks in the tun room. Washbacks are large wooden (usually pine) vessels in which 'wort' (a fermentable liquid produced by mixing malted barley with water) is fermented for about 36 hours after being injected with yeast. The 'wash' from the mashing and brewing stages is then distilled by heating it in large copper stills until the alcohol vaporizes. After passing through a condenser, the 'heart' of the clear spirit run is put into oak casks. Maturation for three years or more in bonded (locked) warehouses gives the whisky its golden colour and distinctive taste. Source: RCAHMS contribution to SCRAN.
